The headquarters of Lucchi e Guastalli (azienda agricola and oil mill) stand in Santo Stefano di Magra (province of La Spezia), in the heart of the Lower Lunigiana.
Founded in 1995 by Marco Lucchi, a graduate in agronomy and expert in oil production techniques, it was the first to produce and market DOP “Riviera Ligure” EVO.
The azienda agricola is also involved in social farming and oleo-tourism and extends over 30 hectares in Lower Lunigiana and the Cinque Terre: it produces table olives, EVO, wine, and honey.
The olive trees, mainly of the Razzola variety, are of ancient origin and grow on terraced hillsides.
The Razzola olive, the primary cultivar in the province of La Spezia, is closely related to the Frantoio and the Taggiasca varieties, with characteristics in between. The plant features a graceful shape, ideal for polyconic vase pruning; it is self-fertile and constantly productive. The drupes are medium-sized and rich in lenticels, with a long scalar ripening and a good oil yield.
The oil produced at the beginning of veraison is medium fruity and green, sweet on the palate with a medium pungent and slightly bitter aftertaste, with sensory notes of artichoke and aromatic herbs.
In 2002, the business purchased the oil mill, built on the remains of an ancient millstone near the Via Francigena. In 2006 (and in 2022) the facility was renovated: it now guarantees the highest quality with a minimum environmental footprint.
The mill uses a continuous 2-stage Pieralisi system with a Protoreactor, featuring efficient water management; it is the first in Liguria to produce zero waste from the production cycle. The olive pits are recycled as an eco-friendly fuel for heating water, while the olive pomace provides electricity in biogas plants. The premises are recognized, under Ministerial authorization, as the seat of the APOL Liguria Panel for
virgin olive oil organoleptic evaluation. It is a reference point for educational and promotional activities on extra virgin olive oil and traditional Ligurian products.
